Blue Rose Cashew Milk

I am so excited to be partnering with Ergo Spout to share this recipe for a delicious, refreshing cashew milk that is vegan and made of completely natural ingredients.

As soon as I received my Ergo Spout and started playing around with recipes, I thought about all the times I’ve made nut milk at home. I’ve had to deal with cleaning up a mess created while pouring it early in the morning when I’m just trying to hurry and run out the door. Not anymore! This spout comes in regular and wide mouth sizes and screws on top of any mason jar easily. The spout is super easy to pour and you can get it in barn red, classic white or vintage blue. It’s easy to screw on/off and pour and I’ve been using it from everything to maple syrup and dressings to hot drinks like chai for serving! I don’t have to worry about any dripping or dribbling of liquid with this.

This recipe is simple, with a little pre-soaking involved. Actually, you should probably go pit a couple of dates, grab a 1/2 cup of cashews, soak them in water and then come back here. The key to this recipe is a little bit of rose water for the flavor and blue spirulina powder for the color. 

Wait, what is spirulina? If you’ve seen it in stores it’s usually green in color and a type of cyanobacteria that is found in lakes in Central America, South America and Africa. It’s vegan, has a high protein and vitamin content and is rich in antioxidants. The kind I get, which is blue, is from Rawnice. It is a glorious blue color with no fishy taste. However, I have seen several brands on Amazon.

With the exception of pre-soaking the dates and cashews, this milk comes together in 2-3 minutes and is easy to made in the morning. I usually soak the dates and cashews in the fridge overnight and make the milk fresh in the morning with my vitamix. The key is to let everything blend for at least a minute. Then I pour it in a large mason jar and store what I don’t drink that morning in the fridge. It will keep for 3-4 days in the fridge. You might have to shake it up a little before use.
